creamy potato, spinach & mushroom soup

yesterday i made some soup, this is now my very favorite soup i've ever had! posting the recipe here so i can make it again :)

this should be cooked in a crockpot set on high for about 5-6 hours, there are a few steps at the very end that take about 20 mins too! 

what you need:
6 cups of veggie broth
3 large  OR 6 smaller potatoes
1/2 white onion
3-4 carrots sliced thinly 
3-4 celery (if you would like)
1 tablespoon of butter (to cook mushrooms in)
1lb of mushrooms
1 package of microwaveable spinach
1/2 package of vegan cream cheese



put 6 cups of veggie broth in crock pot set on high, while that is heating cut up onion &  potatoes, leave skin on the potatoes. add to pot & let that cook on high for about 2.5 hours in the crockpot. 

when the potatoes are soft, mash them with a potato masher.

next add carrots & celery. let all that cook for another 2 hours or until the veggies are soft. 

about 20 mins before you are ready to serve the soup, cook mushrooms in a pan with a little vegan butter over medium until they are browned & tender

while the mushrooms are cooking, microwave the package of spinach. 

add mushrooms & spinach to soup & stir for 1 minute.  

now add 1/2 package of vegan cream cheese, stir until there are no clumps & serve :)


i served this with biscuits.
