i made these friday night & we ate them all! i didn't even take a picture of them, lol! they were really yummy & taste like a butterfinger to me :)
3/4 cups sugar
1 cup brown sugar
1/2 cup butter
1/2 cup peanut butter (i used chunky)
1 TBSP vanilla
2 "eggs" *(i used the flax seed egg mixture)
3 cups flour
3/4 TSP baking soda
3/4 TSP salt
**3 cups butterscotch chips ** add these last!
preheat oven to 350 degrees. mix dry ingredients in one bowl, mix the wet ingredients in another, fold the dry ingredients into the wet (this mixture will be very dry). after your ingredients are combined well go ahead & mix in the butterscotch chips! make 48 cookies using a small ice cream scoop. you will have a lot of butterscotch chips left in the bottom of your bowl so you can roll the cookies in them before baking :) after rolling the cookies in the left over chips push them down with a fork to flatten them out a little.
bake at 350 degrees for 10-12 mins. let cool & enjoy!
* flax seed egg - 1 Tablespoon ground flax seed + 3 Tablespoons water = 1 egg for baking
