Banana Split Loaf

2.5 cups flour
1/4 - 1/3 cups vegan butter
3 large OR 4 medium bananas
1/2 cup sugar
1/4 cup dark brown sugar
1/3 cup crushed (&drained) pineapple
1/4 cup chopped pecans
1/4 cup chopped almonds
1/3 cup dark chocolate chips
1/3 cup drained maraschino cherries
1/2 tsp salt
2 tsps baking powder
& small amount of veggie (or corn) oil for *greasing* the loaf pan
vanilla frosting (optional)


mix flour, salt & baking powder & set aside.

pre-heat your over to 375º & grease your loaf pan!

in a food processor mix the bananas, both sugars, butter until smooth. add the dry ingredience, mix in until doughy... next add the cherries & pulse for a few seconds to lightly chop incorporate well. finally pour the mix back into your mixing bowl so you can fold in the nuts, pineapple & chocolate chips. pour mix into greased loaf pan & bake on 375º (on the middle rack, in the center of the oven) for about an hour or until a toothpick comes out clean from the middle. loosen from loaf pan with soft rubber spatula while its warm, cut & after it cools down a bit. store in a air tight container after it's completely cool. 

this makes a nice breakfast loaf or you can drizzle it with frosting for an extra yummy dessert!
