i don't know why i have never posted this here, but it's yummy & i have been making it since thanksgiving 2007... anyways.....
1 1/2 cups vegan Mayo ( Nayonaise or Vegenaise are both good choices)
1 lb. Extra Firm Tofu
1/2 cup soy sauce
3 celery stalks
1 red onion
1 red pepper (or what ever kind of bell pepper you want to use)
1/2 teaspoon of each Basil, Sage,Rosemary & Oregano
2 teaspoons Paprika
slice tofu into 1/4 inch thich strips & let marinade in soy sauce for about 10-15 mins (in fridge, turning over once)
Pre heat over to 400 degrees
spray baking sheet with non stick spray
place tofu slices on baking sheet, bake for about 30 mins turning slices over half way through. let tofu cool, then shred it up to look like chicken ;o) dice all veggies!!!!!! mix all ingredients together & stick it in the fridge until cooled <3
serve it with lettuce shreds on your favorite bread, OR try it on a kaiser roll (sarah lee makes a vegan kaiser bun) OR in a pita :-D
